Wild Shropshire: Owner behind farm-to-table restaurant in Shrewsbury ‘overwhelmed’ as awarded Michelin Green Star

The owner and chef patron behind the county's only Michelin Green Star restaurant has said he is "overwhelmed" to have received such an accolade just five years into the venture.

James Sherwin launched Wild Shropshire, in Whitchurch, a few days before the first Covid-19 lockdown. 

Without a formal grand opening, and being forced to shut just weeks later, the business might have got off to a rocky start. 

But the last week has seen the Whitchurch restaurant reach new heights entirely, earning a title for its commitment to sustainable practices by Michelin. It’s a title only handed to five restaurants this year.

Speaking to the Shropshire Star on receiving the Michelin Green Star, the 46-year-old said: “It's overwhelming, to be honest.

“A couple years ago, we were given a piece of land by my father-in-law. He's a retired dairy farmer. They sold their land, and they gave us a little piece of land so we could build farms. 

“I've always loved those restaurants that grew their own ingredients, because there's that real farm-to-table thing. No matter how good your ingredients are, if I'm picking them an hour before service, mine are better.

“Then as we opened the farm as it is, we thought, ‘as a nature-based restaurant, we really need to give back what we take and make it a sustainable thing’.
