Chef George brings taste of Hawaii to Shropshire

A chef has brought a taste of Hawaii to Shropshire, and helped find a new way of making money while restaurants are shut in the process.

Hoke Poke, a poke bowl takeaway, has been set up by former Hickory's chef George McCay. The 27-year-old, from Castlefields in Shrewsbury, took the plunge in starting up his own food business after it became clear he'd be struggling for work in the hospitality trade.

Poke is diced raw fish served either as an appetizer or as a main course and is one of the main dishes of native Hawaiian cuisine. So far George's food has proved popular, and he's hoping it will take off even more when the sun comes out.

"We've had only good reviews about the food so far which is really encouraging. We've tried to make it so we can cater for everyone including people with allergies. We've been working out the calorie intakes as well and nearly all our dishes are under 500 calories.

"We'd like to get a van and do festivals once the pandemic is over, and we'd also like our own place in the town centre."

He added: "I started working in restaurants when I was about 15. I tried college but dropped out because I was having more fun at work and liked the fact I had a bit more freedom to move around. I've worked in Edinburgh, London and Paris, mainly in front of house roles.

"I moved back from London and realised I wanted to work for myself.

"I worked for Hickory's for a while, but it was difficult during the pandemic because you're having to implement new policy changes constantly, and it became clear it was going to be tough for the restaurant trade."

George is also donating five per cent of sales to the Shropshire Mind charity to support people struggling with their mental health.
